This recipe has become a staple in my home over the past few summers. When we want a snack that’s quick, not too heavy but filling, and absolutely delicious, this simple recipe fits the bill. It is very customizable, so I’m just putting the basics here. Feel free to experiment with add-ins to fit your taste.
1 1/2 (8 oz) packages of cream cheese, softened.
2 cucumbers peeled and diced.
1 onion, diced
2-3 stalks Celery
2 Tbsp of mayonnaise
Salt and pepper to taste
Mix all together.
Goes great on buttery crackers, bagels, sushi, sandwiches…
Variations: Any combination of the following to your taste. Shredded (instead of diced) cucumber with or without the juice & seeds. Fresh dill herbs. Shredded Swiss cheese. Garlic salt. Celery Salt. Lemon juice. Parsley. Tomato.
