Anyone who knows me knows that I am the world’s biggest chocolate lover. They’ll also know I do my best to eat well. But it has to taste great and be fairly simple to make. So, when I saw these 100% All The Way Live Brownilicious Brownies, I thought it must be a sign from god to step up my vegetarian game. I’ve had them at an outing, catered by Saa Bey of Rawtopian Bliss, and will be trying my hand with them soon. Let me tell you, I do not do bad tasting food for the sake of being healthy. These babies will make you forget who Betty Crocker is.
1 cup each of Walnuts, Pecans, Almonds (soaked in filtered water overnight)
1/2 cup of Chopped Walnuts (for topping)
1 cup of raw Carob Powder or Cocoa Powder
1 cup of Raw Peanut Butter
1 cup of Honey
1 T of vanilla (alcohol free)
Place soaked nuts and carob powder into a food processor and initially “pulse” into a powdery texture. It should look like brown flour. Set this to the side. Ub a separate bowl, mix the peanut butter honey and vanilla. Fold this mixture into the nuts and mix well until it comes into a dough-like consistency. Lay out some wax paper. Place the dough onto the wax paper and place another wax on top so you can toll out the dough to about 1 inch thickness. Sprinkle your 1/2 cup chopped walnuts ove rthe top of your large bownie and then cut to nice-sized squares. Can make 18-24 depending on you you cut them.
